More holiday cooking for you...





I saw the veggies and my mouth watered...what can I say? Here's what's in it:

Roasted and Seasoned Vegetables


Ingredients:

1 Tbsp Chopped Chives 1/4 Cup Olive Oil
1 Tsp Garlic & Sea Salt
1 Tsp Chopped Rosemary
1 Tsp Black Pepper
10 Baby Red Potatoes
2 Medium Yellow Squash
2 Medium Zucchini
1 Large Sweet Potato
2 Medium Green Bell Peppers
3 Tbsp Low Sodium Vegetable Broth

- Preheat oven to 350
- Chop up vegetables and potatoes.
- Add to a large mixing bowl.
- Mix in: seasonings, broth and olive oil. - Combine Well

Oven Baked Ginger Chili Chicken Wings

3-4 lbs chicken wings

Marinade

1/2 cup honey
2/3 cup light soy sauce
1 tsp freshly ground black pepper
2 cloves minced garlic
1 tbsp finely grated fresh ginger root
1 tsp crushed chili paste (or 1/2 tsp chili flakes) (more or less to taste) 1/2 tsp Chinese five spice powder

Pour the marinade over the chicken wings in a large Ziploc bag and store in the fridge for a several hours or overnight.

Make a second batch of the marinade and simmer it slowly over low heat until it reduces in volume by about half.

Place the marinaded chicken wings on an aluminum foil lined cookie sheet and bake at 375 degrees F, uncovered, for about 30-45 minutes or until the chicken is fully cooked.

In the last 20 minutes of cooking time, turn the wings over and begin brushing them with the reduced sauce. Repeat the glazing and turning every few minutes until the wings have fully cooked.

and just one more for you today...

Homemade Hearty Beer Bread


Ingredients:

3 cups flour (all-purpose or a mix of white and whole wheat)
3 tablespoons brown sugar
1 tablespoon baking powder
1 teaspoon salt
1 bottle room temperature beer (Non-alcoholic beer works fine too, though I would recommend a darker, amber non-alcoholic beer if you can find it.)
3-4 tablespoons melted unsalted butter

Directions:

1. Preheat your oven to 375 degrees F and grease a 9x5-inch loaf pan.
2. In a large bowl, stir together the flour, brown sugar, baking powder and salt.
3. Add the beer and stir for about 20 strokes, just until the flour is incorporated. (Try and not over-stir the batter.)
4. Pour into your prepared pan and drizzle with the melted butter.
5. Bake for 40 - 45 minutes. Allow to cool in the pan for 5 minutes on a cooling rack before removing it from the pan.
